ALOO GOBHI sabji

(Potatoes & Cauliflower)

Made Easy Using “YUM” Sabji Masala

Aloo Gobhi Sabji (which means an Indian dish made with vegetables) is one of the most popular vegetarian and vegan Indian dishes consisting of spiced potatoes and cauliflower. The recipe is easy to make, and best of all, all the spices are included in the “YUM” packs.

This recipe is NON-DAIRY, VEGETARIAN, VEGAN AND SPICES HAVE NO ADDED GLUTEN.

NOTES: The “YUM masala packs can be stored in the freezer for up to 12 months to retain freshness.

  • COOK TIME: 25 mins  

  • TOTAL TIME: 45 mins 

  • YIELD: 6-8 servings                                    

STEP 1A

  • 1/3 cup cooking oil of your choice for pan frying or clarified butter (ghee)

  • 6 cups  cauliflower, cut into 2.5 cm/ 1” florets

  • 4 cups potatoes peeled, washed and sliced or cut into 2.5cm/ 1” pieces

  1. Heat the oil or ghee in a frying pan (skillet) on medium high heat.

  2. First fry the cauliflower florets for 5 minutes and keep stirring. Remove cauliflower from the pan and place them on a plate or tray and set aside.

  3. Repeat the same with potato pieces and fry for 5 minutes. Remove them from frying pan and place them on a plate or tray and set aside. Use same frying pan for STEP 1-B


STEP 1B: USING “Y” SPICE PACK

  • 1/3 cup Cooking oil or purified butter (ghee)

  • 1 pk “Y” spice pack

  1. Add this 1/3 cup oil to the same frying pan as in STEP 1-A add “Y” spice pack and brown the cumin seeds on medium heat.


STEP 2: USING “U” SPICE PACK

  • 2 tsp garlic, minced

  • 2 cups onions, finely chopped

  • 2 cups fresh tomatoes, chopped

  • 2 tbsp ginger, minced

  • 1 pk “U” spice pack

  • ½ cup warm tap water

  • ¼ -1 tsp cayenne/ red chili powder or fresh green chillies (optional)

  1. Add garlic to step 1-B and fry on medium heat until garlic is slightly golden brown.

  2. Add onions and fry on medium high heat until golden brown.

  3. Add “U” spice pack and fry spices for ½ minute stirring constantly.

  4. Add chopped tomatoes and crushed ginger and continue frying for 5 minutes.

  5. Add ½ cup of warm water and cook until most of the liquid has been absorbed.

  6. Add fried cauliflower and potatoes and mix well.

  7. Reduce heat to low. Cover and cook for about 10-15 minutes stirring occasionally until potatoes and cauliflower are cooked. Once all vegetables are cooked remove from heat.

  8. Depending on desired spice levels, add cayenne/red chili powder or crushed green chillies.                


STEP 3: Garnish using “M” spice pack

  • 1 cup chopped cilantro

  • 1 pk “M” spice pack

  1. Garnish using “M” spice pack and cilantro and mix well.


Serving recommendations

Serve hot, accompanied with your favourite Indian flat bread (roti, chapati, Ashi’s Rasoi Naan Bread, puri, etc.) and /or basmati rice, raita and Ashi’s Rasoi Dal.
